2 bottles clam juice
3 cups water

1/3 cup dry white wine or 1/3 cup dry vermouth
3/4 lb large shrimp , peeled and deveined
diagonally sliced snow peas
1/4 cup grated fresh parmesan cheese
1 1/2 teaspoons chopped fresh thyme or 1/2 teaspoon dried thyme
1 teaspoon grated lemon zest
1/4 teaspoon fresh ground black pepper
1/8 teaspoon red pepper flakes
fresh parsley , finely chopped , garnish ( optional )

6.Slowly ladle heated clam juice and water mixture into the skillet with the rice, stirring constantly and allowing the liquid to be absorbed before adding more.
7.When the rice is nearly cooked through, sprinkle in the grated parmesan, chopped thyme, lemon zest, black pepper, and red pepper flakes. Stir to combine.
8.Toss in the shrimp and snow peas, stirring occasionally until the shrimp is cooked and pink (around 3-4 minutes).
9.Serve garnished with fresh parsley if desired.
