3 roma tomatoes
12 ounces zucchini , cut into 1 inch slices

18 ounces rice , cooked and cooled
6 large eggs
1/2 cup stock ( or water )
3 garlic cloves , crushed

1 tablespoon Italian herb seasoning
1 tablespoon dry oregano
1/2 teaspoon onion powder
2 tablespoons onion flakes
1/4 teaspoon black pepper
3 tablespoons olive oil

Instructions

1.Preheat the oven to 400 degrees F.
2.Slice the roma tomatoes and zucchini and toss with 1 tablespoon of olive oil. Place on a baking sheet and roast in the oven for 20 minutes.
