This recipe from Bobby Flay is a flavorful twist on classic grilled chicken that is perfect for a summer barbecue or a Sunday family dinner. The use of a brick to weigh down the chicken gives the skin a crispy exterior while keeping the meat moist and tender. The marinade, made with lemon, garlic, and rosemary, infuses the chicken with fragrant and zesty flavors, making each bite a tasty treat. This dish pairs perfectly with a variety of summer sides such as a refreshing cucumber salad or grilled vegetables.

Instructions

1.In a large bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, rosemary, parsley, salt, and black pepper to make the marinade.
2.Place the butterflied chickens in a large baking dish and pour the marinade over the top, making sure to coat evenly. Cover the dish with plastic wrap and refrigerate for at least 2 hours, up to overnight.
3.Preheat grill to medium-high heat. Remove the chickens from the marinade and discard the remaining marinade. Place the chickens on the grill skin-side down, and place a brick or heavy object on top of each chicken.
4.Grill the chickens for 10-12 minutes per side, or until the internal temperature of the chicken reaches 165°F.
5.Remove the chickens from the grill and let rest for 5 minutes. Slice and serve with grilled lemon wedges.
