Ingredients

1 fennel bulbs
6 quarts water
2 1/4 teaspoons salt , divided
1 lb uncooked ziti pasta ( short , tube-shaped pasta )
1 tablespoon olive oil
1 lb sweet Italian sausage
2 cups onions , wedges ( about 2 medium , cut 1/4-inch-thick )
1/2 teaspoon crushed red pepper flakes
1/4 cup tomato paste
1/4 cup grated fresh pecorino romano cheese
Ziti With Sausage, Onions, and Fennel is a classic Italian pasta dish that is both satisfying and delicious. Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Cut the fennel bulbs into quarters and remove the core. Rinse the fennel with cold water and pat dry.
3.Bring a large pot of water to a boil. Add 2 teaspoons of salt to the water, then add the ziti pasta. Cook for 8-10 minutes or until al dente, then drain.
4.In a large skillet, heat the olive oil over medium heat. Add the sweet Italian sausage and cook until browned, breaking it up into small pieces as it cooks.
5.Add the onion wedges, crushed red pepper flakes, and the remaining 1/4 teaspoon of salt to the skillet. Continue cooking for 5-7 minutes, until the onions are soft and translucent.
6.Stir in the tomato paste and cook for an additional 2-3 minutes, until the paste starts to caramelise.
7.Add the cooked and drained ziti pasta to the skillet, along with the grated fresh pecorino romano cheese. Mix to combine.
8.Transfer the pasta mixture to a large baking dish and bake for 10-15 minutes, until the cheese is melted and bubbly on top. Serve hot.
