1/2 cup freshly grated romano cheese

Instructions

1.Bring a large pot of salted water to a boil.
2.Cut the zucchini into thin rounds and set aside.

9.Add the romano cheese and ricotta cheese and toss again. If the pasta seems dry, add some of the reserved pasta cooking water to loosen the sauce.
10.Serve hot, garnished with more grated cheese if desired.
