Ingredients

2 lbs sardines , canned in olive oil
1/2 cup pine nuts , slightly toasted
1/2 cup olive oil
1/2 cup raisins , plumped in warm
3/4 cup red wine , for 30 minutes
8 cloves garlic , minced
2 cans peeled Italian tomatoes , with juice
1 can tomato paste
1 small fresh fennel , cleaned , boiled and sliced thin ( bulb and greens )
1 tablespoon sugar
salt and pepper , to taste
2 tablespoons finely chopped fresh parsley
1 tablespoon oregano

Instructions

1.Extract sardines from the tin can and set aside for later use.
2.In a large frying pan, heat olive oil over medium heat and add garlic , cook for 1-2 min until golden yellow.
3.Add red wine, canned peeled tomatoes, tomato paste, fennel, sugar, salt, pepper, parsley, and oregano into the pan. Stir, and let it simmer for 10 minutes.
4.Add canned sardines, and cook for 5 more minutes until everything is heated.
5.Meanwhile, cook pasta according to the package directions in a pot of salted boiling water.
6.Toast the pine nuts in a separate frying pan over medium heat.
7.Add raisins, pine nuts, and breadcrumbs into the previous pan and cook for 5 more minutes.
8.Drain pasta and add it to the pan. Stir and cook for 2-3 additional minutes.
9.Serve hot with extra breadcrumbs sprinkled on top.
