Ingredients

1 package Simply Potatoes Diced Potatoes with Onion
1 package fully-cooked bacon , slices cut in 1/2 inch peices ( divided )
6 scallions , Sliced ( white bottoms and green tops used separately )
1 red bell pepper , Seeded & Diced
jalapeno pepper , Seeded & Diced
2 eggs
1/4 lb butter ( divided ) or 1/4 lb margarine ( divided )
1 lb canned crabmeat or 1 lb fresh surimi crabmeat
1 can creamed corn
1 can corn niblets , drained
1 package corn muffin mix , such as Jiffy
1 jar alfredo sauce
1 cup sour cream
1 ounce coarse grated parmesan cheese or 1 ounce romano cheese

Instructions

1.Preheat the oven to 350°F.
2.Melt half of the butter in a large skillet over medium-high heat.
3.Add the red bell pepper, white parts of the scallions, and jalapeno pepper and cook for 3-5 minutes, stirring often.
4.Add the crabmeat, corn niblets, creamed corn and Old Bay Seasoning to the skillet, mix well and cook for another 3-4 minutes.
5.In a separate bowl, beat the eggs and add the corn muffin mix, sour cream, Alfredo sauce and the remaining butter, whisk until fully combined.
6.Add the crab and corn mixture to the egg mixture and mix well.
7.Stir in the diced potatoes with onion and most of the bacon, reserving a small amount of bacon for later.
8.Transfer the mixture to a greased casserole dish and top with the remaining bacon and green scallions tops.
9.Bake the souffle' for 45-50 minutes until fully cooked and golden brown.
