Ingredients

250 g spaghettini ( or other thin pasta )
100 g ricotta cheese ( or cream cheese , or creme fraiche )
2 tablespoons toasted pine nuts ( or almonds , or walnuts )
50 g parmesan cheese , freshly grated ( to taste )
1 -2 minced garlic clove ( to taste , or garlic powder )
1 tablespoon fresh minced herbs ( rosemary , basil , parsley , sage , oregano , ... )
50 ml white wine ( a `` tolerant '' dash )
50 -100 g gorgonzola ( optional ) or 50 -100 g dolcelatte ( optional )
1 teaspoon butter
salt and pepper
Pasta Pronto is a quick and easy pasta dish that can be prepared in under 30 minutes. This recipe is my take on the classic Italian pasta dish, using a creamy ricotta cheese sauce with garlic and herbs. The addition of pine nuts adds a nice contrast in texture to the dish. This pasta dish is perfect for a busy weeknight dinner when you want something delicious but don't have a lot of time to spend in the kitchen. It's a crowd-pleaser that will leave everyone satiated and satisfied.

Instructions

1.Cook the pasta in a pot of boiling salted water for 9-10 minutes until al dente. Drain and reserve about 1 cup of pasta water.
2.While the pasta is cooking, melt butter in a saucepan and add minced garlic. Cook for a minute until fragrant.
3.Add white wine to the pan and let it reduce for 1-2 mins.
4.Add ricotta cheese, pine nuts, parmesan cheese, and fresh herbs. Mix well and cook for another 2-3 minutes.
5.If the sauce is too thick, add a splash of pasta water to loosen it up.
6.Toss the cooked pasta into the sauce and mix well.
7.Optional: Add gorgonzola or dolcelatte for extra creaminess.
8.Serve hot and enjoy!
