The Humble Shepherd is a classic casserole recipe that originated in rural areas of Europe. It is often made with lamb or beef, but this version uses ground turkey to make it more affordable and accessible. The casserole is made by layering the meat mixture at the bottom of the dish and topping it with mashed potatoes before baking in the oven. The cheese on top adds a nice crispy texture and flavor. The dish is simple, comforting, and perfect for a cozy night at home.

Instructions

1.Preheat oven to 350°F. Grease a 9x13 inch baking dish with cooking spray.
2.In a large pot, cook the potatoes in salted boiling water until tender, approximately 15 to 20 minutes. Drain and return potatoes to the pot.
3.Add butter and milk and mash until smooth. Season with salt and pepper to taste. Set aside.
4.In a large skillet, heat the vegetable oil over medium-high heat. Add the ground turkey and onion, and cook until browned and the onion is softened, approximately 5 to 7 minutes. Add the chicken gravy mix and water, stirring until fully combined.
5.Stir in the thawed peas and carrots and cook for an additional 2 to 3 minutes until heated through.
6.Spread the turkey mixture evenly in the bottom of the prepared baking dish. Top with the mashed potatoes and sprinkle with shredded cheese.
7.Bake in preheated oven for 20 to 25 minutes or until heated through. Broil for an additional 2 to 3 minutes or until cheese is golden brown and bubbly. Let cool for 5 minutes before serving.
