Ingredients

1 package no-boil lasagna noodles
1 lb Italian sausage
1 yellow squash , sliced thinly
1 zucchini , sliced thinly
1 jar spaghetti sauce , I use one with mushrooms
15 ounces ricotta cheese , I use frigo brand
1 egg , slightly beaten
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
4 cups mozzarella cheese
1/4 cup grated parmesan cheese
Erin's Lasagna is a classic family-style dinner that is perfect for a cozy night in or a family gathering. Instructions

1.Preheat oven to 375 degrees.
2.In a large skillet, cook Italian sausage over medium-high heat until browned, breaking it up as it cooks.
3.Add sliced squash and zucchini to the skillet and cook for an additional 3-5 minutes until vegetables are tender. Remove from heat.
4.In a medium bowl, combine ricotta cheese, egg, dried basil, and dried oregano to make the cheese filling.
5.Assemble the lasagna. Begin by spreading a thin layer of spaghetti sauce on the bottom of a 9x13 inch baking dish. Add a layer of noodles, followed by a layer of cheese filling, a layer of sausage and vegetables, and a layer of mozzarella cheese, then repeat layers until all ingredients are used.
6.Sprinkle grated parmesan cheese over the top layer of mozzarella.
7.Cover lasagna with foil and bake for 25 minutes, then remove foil and bake an additional 25-30 minutes until cheese is golden brown and bubbly. Let cool for 10 minutes before serving.
