Ingredients

2 cups small curd cottage cheese or 2 cups ricotta cheese
1 3/4 cups shredded mozzarella cheese
3/4 cup grated parmesan cheese
2 tablespoons italian seasoning
1 tablespoon milk
3 large eggs
1 cup water
3/4 cup all-purpose flour
1 lb hamburger
3/4 lb Italian sausage
1 can spaghetti sauce
1/3 cup evaporated milk
Three Cheese Manicotti - Crepe Style is a new twist on the traditional baked manicotti. Instead of using tubes of pasta, crepes are used to hold the cheese filling and provide a lighter texture to the dish. This recipe combines three cheeses - cottage cheese or ricotta cheese, mozzarella cheese and Parmesan cheese - for a rich and indulgent pasta meal. The pasta is then smothered in a spaghetti sauce meat mixture and baked until hot and bubbly. Serve with garlic bread and a salad for a complete meal.

Instructions

1.In a large bowl, combine cottage cheese, 1 1/4 cups mozzarella cheese, 1/2 cup Parmesan cheese, Italian seasoning, milk, and eggs. Mix well.
2.In another bowl, combine water and flour. Beat with an electric mixer until smooth and well blended.
3.In large skillet brown hamburger and Italian sausage until cooked through. Drain.
4.Stir in spaghetti sauce and evaporated milk.
5.Pour 1/2 cup of the flour mixture into a hot skillet. Swirl to coat bottom of skillet evenly. Cook until set but not brown.
6.Spoon 1/4 cup of the cheese mixture over the crepe.
7.Roll up crepe and place seam side down in a greased 9x13 baking dish. Repeat with remaining flour mixture and cheese filling.
8.Pour spaghetti sauce mixture over filled crepes. Sprinkle with 1/2 cup mozzarella cheese and 1/4 cup Parmesan cheese.
9.Bake at 350°F for 30 minutes or until hot and bubbly.
