The soup is vegetarian, gluten-free, and keto-friendly, making it accessible to a wide range of dietary needs. The soup is best served chilled and can be garnished with a drizzle of olive oil, a pinch of salt, or a sprig of fresh mint.

Instructions

1.Bring a large pot of salted water to a boil.
2.Add the shelled peas and boil for 2-3 minutes, until they are bright green and tender.
3.Drain the peas and transfer them to a large bowl filled with ice water. This will stop the cooking process and help the peas retain their bright green color.
4.Drain the peas again and transfer them to a blender or food processor. Add the diced scallion, olive oil, and vegetable broth, and blend until the mixture is smooth and creamy.
5.Add the fresh mint to the blender and blend for another 30 seconds, until the mint is completely incorporated.
