Eggplant parmesan is an Italian-American dish that combines breaded and fried eggplant slices with tomato sauce and cheese. This vegan and gluten-free version replaces the traditional cheese with nutritional yeast and uses a batter made with Braggs liquid aminos and cornstarch. The result is a crunchy and savory eggplant slice that pairs perfectly with spaghetti and tomato sauce. This recipe is a healthier and more sustainable alternative to the original eggplant parmesan, making it a great option for those following a vegan or gluten-free diet.

Instructions

.Preheat oven to 375°F (190°C).
.Slice eggplant into thin rounds and place them in a colander. Salt the eggplant to release moisture and let sit for 30 minutes. Rinse off the salt and pat dry with a paper towel.
.In a bowl, mix Braggs liquid aminos, nutritional yeast, and cornstarch to make a batter.
.Dip eggplant slices in the batter and place in a single layer on a baking sheet. Drizzle canola oil over the eggplant slices.
.Bake the eggplant for 25 minutes or until golden brown.
.Cook the gluten-free spaghetti according to package instructions.
.Heat spaghetti sauce in a saucepan with garlic powder, onion powder, basil, and oregano.
.Assemble the dish by placing the cooked spaghetti on a plate, topping with the roasted eggplant slices and spaghetti sauce. Serve with vegan parmesan cheese or nutritional yeast on top.
