Ingredients

450 g fresh unshelled cranberry beans or 2/3 cup dried cranberry beans , soaked and boiled until cooked through
1 tablespoon extra virgin olive oil
1/2 cup finely chopped onion
3/4 cup crumbled skinned pork sausage
5 cups homemade meat broth ( or 1/2 cup canned beef broth diluted with 4 1/2 cups water )
1 1/2 cups carnaroli arborio rice or 1 1/2 cups other imported italian rice , for risotto rice
2 tablespoons butter
1 cup freshly grated parmigiano-reggiano cheese
1 tablespoon chopped flat-leaf Italian parsley
salt & freshly ground black pepper

Instructions

1.Wash your rice in cold water thoroughly.
2.In a deep bottomed pan, sweat off the onions in olive oil until they turn translucent.
3.Saute sausage meat in the same pan and add beans.
4.Cook for a few minutes and add the rice to the pan. Toast the rice in the sausage fat mixture for about a minute.
5.Now add a ladle of warm broth at a time to the rice, stirring continuously as the rice cooks and the liquids are absorbed.
6.Repeat the process by adding broth as needed until the risotto is creamy in texture and the rice is cooked al dente. Stir in butter and grated Parmigiano-Reggiano cheese.
7.Season to taste with salt and fresh ground black pepper. Top with chopped parsley before serving.
