Ingredients

8 boneless skinless chicken breasts
1 1/2 cups seasoned dry bread crumbs ( I use Progresso )
1/2 cup parmesan cheese ( or any other hard Italian cheese you prefer ) or 1/2 cup romano cheese , grated ( or any other hard Italian cheese you prefer )
2 eggs , beaten
olive oil , for frying
4 cups tomato sauce ( see description above )
16 slices parma ham , thinly sliced ( optional )
16 ounces mozzarella cheese , grated
1/4 cup parmesan cheese , grated

Instructions

1.Preheat the oven to 350°F (175°C).
2.Place the chicken in between two pieces of parchment paper and pound with a meat mallet untill thin.
3.In a shallow bowl, mix together bread crumbs and parmesan cheese.
4.Dip the chicken in the beaten eggs, then coat it with the bread crumb mixture.
5.Heat olive oil in a large skillet on medium-high heat. Fry the chicken until golden brown on both sides.
6.In a baking dish, layer the tomato sauce, fried chicken, thin slices of parma ham, grated mozzarella cheese, and grated parmesan cheese.
7.Bake in the preheated oven for 20 - 25 minutes, or until the cheese is melted and bubbly.
