1 cup chicken broth
8 sun-dried tomatoes

4 cups broccoli florets

1 lb linguine
1 cup parmesan cheese , grated

Lou's Linguine with Broccoli and Tomatoes is a classic pasta dish with a healthy twist. The linguine is tossed in a flavorful sauce made with sun-dried tomatoes and diced tomatoes, olive oil, and garlic. The dish is then packed with broccoli florets, sliced mushrooms, and sliced bell pepper for added texture and flavor. Instructions

1.In a large pot of salted boiling water, cook the linguine according to the package instructions until al dente. Drain the pasta, reserving 1/2 cup of the pasta water.
2.In a large skillet, heat 3 tbsp of olive oil over medium heat. Add garlic and cook for 30 seconds or until aromatic.
3.Add the sun-dried tomatoes and diced tomatoes to the skillet, stir to combine and cook for about 2-3 minutes.
4.Season with salt and pepper. Add the broccoli florets, sliced mushrooms, and sliced bell pepper to the skillet, stir and cook the vegetables for 5-7 minutes or until tender crisp.
5.Drain the excess liquid from the skillet, add the remaining 2 tbsp of olive oil, and add the cooked linguine to the skillet. Toss the pasta and vegetables together.
6.Add parmesan cheese and fresh basil to the skillet, toss again to combine. If the pasta looks dry, add reserved pasta water to the skillet, 1/4 cup at a time, until it reaches the desired consistency.
7.Serve hot with additional parmesan cheese sprinkled on top.
