Ingredients

1 cup lukewarm water
1 package active dry yeast
1/3 cup milk
2 tablespoons olive oil
1/4 cup whole wheat flour ( I use 1/2 cup and use 1/2 cup less bread flour )
1/2 cup oat bran
2 - 2 1/2 cups bread flour
1/2 teaspoon salt
2 tablespoons cornmeal

Instructions

1.In a large mixing bowl, dissolve active dry yeast in lukewarm water and add the milk and olive oil, stir gently until combined.
2.Add the whole wheat flour, oat bran, bread flour, salt and mix well using a stand mixer.
3.Continue mixing until the dough comes together into a ball, about 5 minutes. Then cover the bowl with plastic wrap and let the dough rise for 2-3 hours.
4.Preheat the oven to 425°F (220°C) and place a roasting pan on a lower shelf to heat up.
5.Sprinkle cornmeal on a clean surface and place the dough on top. Divide the dough in half and form each one into a rectangle.
6.Place the dough on a baking sheet and let it rise for 20-30 minutes.
7.Then put it in the oven and pour boiling water into the roasting pan.
8.Bake for 20-25 minutes or until golden brown, then let it cool slightly before serving.
