Ingredients

8 lbs italian plums ( sometimes called prune plums )
3 cups sugar
3 cups water
3 tablespoons orange rind , thinly slivered
2 cinnamon sticks
1 tablespoon whole cloves
2 cups tawny port

Instructions

1.Rinse and pit plums.
2.In a large pot combine the sugar, water, orange rind, cinnamon sticks and whole cloves.
3.Bring to boil over medium heat, stirring until sugar has dissolved.
4.Reduce heat and add plums, cover and simmer until tender, about 20 to 30 minutes, stirring occasionally.
5.Remove plums from pot to a serving dish with a slotted spoon.
6.Discard cloves and cinnamon sticks and reduce sauce by half.
7.Add two cups of tawny port to the sauce and stir.
8.Boil the sauce again for 2 minutes and let it cool.
9.Strain sauce over plums and chill before serving.
