Instructions

1.Preheat oven to 325°F.

4.In a dutch oven or oven-safe pot, heat olive oil over medium-high heat. Add chopped onion and beef stew meat.

7.Cover the pot with a lid and place it in the preheated oven. Bake for 2 hours, or until the beef is tender and falls apart.
8.While the beef is cooking, make the Italian salsa verde. Combine chopped mint, dill, parsley, minced shallot, olive oil, salt, and pepper in a small bowl. Stir to combine.
9.When the beef is done cooking, remove it from the oven and let it rest for 5-10 minutes before serving. Serve with Italian salsa verde on top.
