Ingredients

3 quarts tomato sauce
6 ounces tomato paste
2 medium yellow onions , coarsely chopped
1/2 - 1 head garlic , finely chopped
1/3 cup dehydrated mushroom pieces
1 large black olives , coarsely chopped ( optional )
1/4 cup italian seasoning
2 tablespoons dried basil
2 tablespoons olive oil
1 rump roast
3 cups dried polenta
12 cups water
1 1/2 lbs mozzarella cheese , shredded
1 cup parmesan cheese , grated

Instructions

1.Preheat oven to 350°F (175°C).
2.In a large pot, bring water to boil and slowly add polenta, stirring constantly.
3.Lower heat to medium and continue stirring for 30-40 minutes until the polenta is thick and creamy.
4.In a separate pot, mix tomato sauce, tomato paste, onions, garlic, mushroom pieces, black olives (optional), Italian seasoning, basil and olive oil and bring to a simmer.
5.Slice the rump roast into thin strips and sauté in olive oil until browned on both sides.
6.In a 9x13 inch baking dish, layer the polenta, sauce, meat and mozzarella cheese until all ingredients are used up.
7.Top with parmesan cheese and bake for 30-40 minutes until bubbly and golden brown.
