Spasagne or Spaghetti Pie is a delicious twist on traditional spaghetti and meat sauce. This recipe uses a combination of ground chicken and beef mince to create a flavorful sauce that's loaded with vegetables and herbs. The spaghetti is cooked to al dente and layered with the sauce in a baking dish, then topped with an egg and milk mixture and plenty of cheese. The result is a rich and satisfying casserole that's perfect for a chilly evening or a casual dinner with friends.

Instructions

1.Preheat the oven to 375°F.
2.Cook spaghetti according to package instructions until al dente, then drain and set aside.
3.While the spaghetti cooks, prepare the sauce. Heat a large skillet over medium-high heat and add a generous pat of butter and a drizzle of olive oil. Add ground chicken and beef mince to the skillet and stir to break up any clumps. Cook until the meat is browned and no longer pink, stirring occasionally.
4.Add chopped onion, carrots, celery, mushrooms, and minced garlic to the skillet. Cook until the vegetables are soft and lightly browned, stirring occasionally.
5.Add tomato paste, canned diced tomatoes, bay leaves, italian seasoning, and thyme to the skillet. Stir well to combine and adjust seasoning as needed with salt and pepper. Add a glass of red wine and let simmer for 15-20 minutes, or until the sauce has thickened.
6.Remove the bay leaves and thyme sprigs from the sauce. Add a tablespoon of flour and stir well to combine. This will help the sauce thicken further.
7.Grease a 9x13-inch baking dish with butter. Spread half of the cooked spaghetti evenly in the dish. Pour half of the sauce over the spaghetti. Repeat with the remaining spaghetti and sauce.
8.In a small bowl, whisk together 2 eggs and 1 cup of milk. Pour the egg mixture over the spaghetti and sauce in the baking dish.
9.Top the dish with grated cheese. Place the baking dish in the oven and bake for 30-35 minutes, or until the cheese is melted and bubbly and the top is lightly browned. Let cool for 5-10 minutes before serving.
