1 3/4 cups brewed black tea , cold
1 cup packed light brown sugar
1 1/4 cups golden raisins
1/4 cup chopped candied citron
1 1/4 cups self-rising flour
1 egg , beaten

Instructions

1.Preheat your oven to 350°F (180°C). Grease and line a 2lb (900g) loaf tin with baking paper.
2.In a large mixing bowl, combine the cold brewed tea with the brown sugar, golden raisins, and candied citron. Leave to soak for 10 minutes.
3.Once soaked, add the self-rising flour and beaten egg to the bowl and mix well.
4.Pour the mixture into the prepared loaf tin and bake in the preheated oven for 50-55 minutes, or until golden brown and cooked through.
5.Once baked, remove from the oven and leave to cool in the tin for 10 minutes. Then, transfer to a wire rack to cool completely before serving.
