2 cooked chicken breasts , thinly sliced , divided
1/2 cup jalapeno peppers cut into rings , divided
1 large tomato , chopped
1/4 cup salsa , or to taste
1/4 cup sour cream , or to taste
Who doesn't love nachos? These Irish Potato Nachos are a twist on the ever popular Mexican nacho dish. The dish incorporates thinly sliced potatoes instead of corn chips, creating a more filling appetizer. The jalapeno peppers give these nachos an extra kick, while chicken is added to the dish to supply additional protein. Cheese is the glue that brings it all together. Top it off with fresh tomatoes, salsa, and sour cream and you have a delicious appetizer that will be a hit at any gathering.

Instructions

1.Preheat oven to 400 degrees F (200 degrees C).
2.Spread potato slices onto 2 baking sheets.
3.Combine garlic and vegetable oil in a small bowl; brush over potatoes. Season with salt.
4.Bake potatoes in the preheated oven for 20 minutes.
5.Sprinkle Cheddar cheese, Monterey Jack cheese, and mozzarella cheese over potatoes; top with half the green onions, sliced chicken, and jalapeno peppers. Repeat layering with remaining potatoes, Cheddar cheese, Monterey Jack cheese, mozzarella cheese, green onions, chicken, and jalapeno peppers.
6.Bake in the preheated oven until cheese is melted and bubbling, about 10 minutes.
7.Top with chopped tomatoes and salsa. Dollop with sour cream. Serve hot.
