Ingredients

4 ounces country lean pork sausage
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped yellow onion
1/2 teaspoon dried basil leaves
2 tablespoons plain breadcrumbs
2 boneless chicken breasts , trimmed and flattened to 1/4-inch thickness
2/3 cup prepared spaghetti sauce
2 slices provolone cheese
shredded parmesan cheese ( optional )
Italian Sausage-Stuffed Chicken Breasts are a wonderful twist on traditional chicken dishes. Instructions

1.Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
2.In a large skillet over medium heat, cook pork sausage, green pepper, and onion until sausage is browned and vegetables are tender. Drain off excess grease.
3.Remove skillet from heat. Stir in basil and breadcrumbs. Set aside.
4.Place chicken breasts flat on a cutting board. Spoon half of the sausage mixture onto each chicken breast. Roll up tightly, securing with toothpicks or kitchen twine if needed.
5.Place chicken rolls seam-side down into the prepared baking dish. Top each roll with about 1/3 cup of spaghetti sauce.
6.Bake for 20-25 minutes or until chicken is cooked through. Remove from oven, place 1 slice of provolone cheese on top of each chicken roll, and bake an additional 1-2 minutes or until cheese is melted and bubbly.
7.Remove toothpicks or kitchen twine and serve hot. Optional: sprinkle with shredded Parmesan cheese for added flavor.
