Ingredients

4 orange-sized round zucchini or 2 large regular zucchini
1 medium onion , diced
1/2 cup red bell pepper , diced
1/2 cup green bell pepper , diced
4 garlic cloves , minced
2 medium tomatoes , diced
4 links Italian sausage

2 cans tomato sauce
2 tablespoons olive oil

Instructions

1.Preheat the oven to 375°F.
2.Cut the top 1/2 inch off of each zucchini. Scoop the inside out of each zucchini with a spoon.
3.Chop the scooped-out zucchini into small pieces. Heat olive oil in a large skillet over medium-high heat. Add the onion, red and green pepper, garlic, and scooped-out zucchini. Sauté until the vegetables are tender.
4.Remove the casings from the Italian sausage and add the meat to the skillet. Cook until browned, breaking the sausage up into small pieces with a wooden spoon.
5.Reduce the heat to low and stir in diced tomato, tomato sauce, basil, oregano, salt, and pepper. Allow the sauce to simmer for 10-15 minutes.
6.While the sauce simmers, cook the penne pasta according to package instructions.
7.Stuff each zucchini with the sausage and vegetable mixture, packing it in tightly. Place the stuffed zucchini in a baking dish.
8.Pour the remaining sauce over the stuffed zucchini. Sprinkle shredded mozzarella and Parmesan cheese evenly over each zucchini.
9.Bake for 30-40 minutes or until the cheese is melted and bubbly.
