12 ounces pork fatback , cubed
12 garlic cloves , peeled
2 teaspoons dried rosemary
2 porterhouse steaks
coarse salt , to taste

Instructions

1.Preheat the oven to 375°F.

8.In a separate skillet over high heat, sear the steaks on the first side for 5 minutes.
9.Flip the steaks and sear on the other side for another 5 minutes.
10.Remove from skillet and place on baking sheet.
11.Spread the pork fatback, garlic, and rosemary mixture over top of the steaks.
12.Bake in the preheated oven for 8 to 10 minutes.
