Ingredients

2 cups sliced mushrooms ( about 375 gms )
1 tablespoon lemon juice
6 tablespoons butter
2 tablespoons fresh parsley , finely chopped ( or 1 tblspn dried parsley )
2 teaspoons fresh basil , finely chopped ( optional ) or 1 teaspoon dried basil
2 leeks , sliced and washed
2 tablespoons olive oil
1 garlic clove , crushed ( optional )
2 cups arborio rice
1 cup dry white wine
4 cups chicken stock , hot
1/2 cup cashew nuts , coarsely chopped
1/2 cup parmesan cheese , grated
Mushroom, Leek, and Cashew Nut Risotto is a creamy and nutty rice dish cooked in broth until the rice is tender. The dish is prepared with sliced mushrooms, sliced and washed leeks, olive oil, garlic, arborio rice, butter, chicken stock, cashew nuts, and parmesan cheese. Instructions

1.Sauté the mushrooms and garlic (if using) in 2 tablespoons of butter and lemon juice until tender and fragrant.
2.Remove from the pan and set aside.
3.Cook the leeks in 2 tablespoons of butter and olive oil until tender.
4.Add the rice, stirring constantly for 1-2 minutes. Add white wine and stir until absorbed.
5.Add chicken stock to the rice mixture, one ladle at a time, stirring constantly until the rice is cooked and the liquid is absorbed.
6.Once the rice is cooked, stir in the cooked mushrooms, cashew nuts, 2 tablespoons of butter, and parmesan cheese.
7.Add parsley and basil, stirring well. Serve hot.
