1/2 cup onion , diced
7 tablespoons extra virgin olive oil , divided
1 can whole tomatoes , drained
1 cup roasted red pepper , chopped
1/4 cup fresh parsley leaves , copped and divided

1 tablespoon Dijon mustard

12 12 ounces pork or 12 ounces chicken cutlets ( 8 pieces )
Milanese-Style Cutlets With Roasted-Pepper & Tomato Sauce is a classic Italian dish that is commonly found in Milan. The cutlets are breaded with breadcrumbs, fried until crispy, and served with a tangy roasted pepper and tomato sauce. This is a hearty main course that is perfect for a family meal or dinner party. Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, cook onion in 3 tablespoons of oil, for about 5 minutes or until tender.
3.Add the drained tomatoes, roasted red peppers, 2 tablespoons of parsley, red wine vinegar, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
4.Bring it to a boil, reduce to medium-low, and let it simmer for about 15 minutes or until the sauce thickens, stirring occasionally.
5.To make the cutlets, place the breadcrumbs in a shallow dish, whisk eggs in another shallow dish, and combine the Dijon mustard with the flour in a third shallow dish.
6.Coat each cutlet with flour mixture, egg, and breadcrumbs, in that order.
7.In a large skillet, heat 2 tablespoons of oil over medium-high heat, and cook the cutlets for about 3 minutes per side or until golden brown.
8.Serve the cutlets hot with the roasted pepper and tomato sauce on top. Garnish with the remaining parsley.
