2 stalks celery with leaves , stalks diced and leaves chopped
1 clove garlic , diced
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried thyme
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 package smoked sausage , sliced

Instructions

1.Rinse the split peas in cold water and set aside.
2.In a large pot, cook the bacon over medium heat until crispy, then remove and set aside.
3.Add the ham hock to the pot and cook until browned on all sides, then remove and set aside.
4.Add the onion, garlic, celery, and leek to the pot and cook until softened.
5.Add the chicken broth, water, split peas, salt, pepper, thyme, nutmeg, and cloves, and bring to a boil.
6.Reduce heat to low and add the ham hock, potatoes, and carrots to the pot. Simmer for 2-3 hours until the peas are soft and the soup is thickened.
7.Remove the ham hock from the soup and cut the meat into small pieces.
8.Add the sausage and cook for 10-15 minutes, until heated through.
9.Serve the soup hot, garnished with the crispy bacon and chopped celery leaves.
