Ingredients

10 ounces button mushrooms ( Baby Bella ` s cut in 1/2 )
1 red onion , diced
4 garlic cloves , minced
1/4 cup vermouth or 1/4 cup white wine
1/4 teaspoon salt
1 pinch chili pepper flakes
1/2 teaspoon dried herbs ( rosemary , thyme , oregano or parsley )
1/4 teaspoon fresh ground nutmeg
8 cups arugula , washed and spun dry
1 pear , diced
1/4 cup crumbled blue cheese
1/4 cup toasted pine nuts ( optional )

Instructions

1.Preheat oven to 375°F and line a baking sheet with parchment paper.
2.Heat olive oil in a large skillet over medium heat.
3.Add in button mushrooms, red onion, garlic cloves, vermouth or white wine, salt, chili pepper flakes, dried herbs, and fresh ground nutmeg.
4.Cook, stirring occasionally, for 8-10 minutes or until mushrooms are golden brown and onions are caramelized.
5.In a large bowl, toss the arugula with the cooked mushroom mixture and pear.
6.Sprinkle with crumbled blue cheese and toasted pine nuts (optional).
7.Serve immediately and enjoy!
