Ingredients

3 tablespoons olive oil , divided
1 1/2 cups chopped onions
3 garlic cloves , minced
4 ounces lean smoked ham , minced
1 cup fresh breadcrumb
1 cup freshly grated parmesan cheese , divided
1/2 cup chopped Italian parsley
1 large egg ( beaten )
8 medium zucchini , horizontal top cut off
Zucchini stuffed with ham and parmesan is a nutritious and delicious dish that is perfect for a healthy dinner or lunch. Instructions

1.Preheat oven to 375°F (190°C). Grease a 9 x 13 inch baking dish.
2.Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the onions and garlic and cook until softened and fragrant, about 5 minutes.
3.Add the smoked ham and cook for another 5 minutes.
4.Add the breadcrumbs, 1/2 cup of parmesan cheese, parsley, and beaten egg, mix well. Remove from heat.
5.Cut the top off the zucchini horizontally and hollow out the inside with a spoon. Brush the zucchini with the remaining 1 tablespoon of olive oil .
6.Spoon the ham mixture into the inside of the zucchini and sprinkle with the remaining 1/2 cup of parmesan cheese.
7.Place the stuffed zucchini in the greased baking dish and bake for 35-40 minutes, until the zucchini is tender and the filling is golden brown.
