Dutch Crunch rolls are a type of bread originating in the San Francisco area, although the recipe was actually created in the Netherlands. The bread's signature crackly topping is achieved by a rice flour paste scrawled over the top of the bread dough before baking. The combination of the crispy, craggy crust and the soft and pillowy interior makes Dutch Crunch rolls a favorite among bread lovers. Traditionally eaten for breakfast, Dutch Crunch rolls can be enjoyed on their own or with anything from jam and cheese to eggs and bacon. They're a great choice for brunches and make-ahead breakfasts.

Instructions

1.In a large mixing bowl, stir together warm water, active dry yeast, and white sugar.
2.Add all-purpose flour, bread flour, and salt to the bowl. Knead the dough with your hands for about 10 minutes until it gets smooth and elastic.
3.Take a separate mixing bowl and combine rice flour, warm water, vegetable oil, white sugar, active dry yeast, and salt. Whisk the mixture into a smooth paste.
4.Preheat oven to 400°F. Cut the dough into 6 to 8 large pieces and shape them into rolls. Dip the tops in the rice flour paste and let the rolls rest for up to 15 minutes.
5.Bake for 20 to 25 minutes until golden and crispy. Serve the Dutch Crunch rolls warm or cold.

PROS

Dutch Crunch rolls are crispy and golden on the outside and soft and warm on the inside.
They are easy-to-follow and keep fresh for a few days, making them an ideal breakfast or brunch option.

CONS

While the bread recipe is simple, the rice flour paste takes time and effort.
The result, while delicious, is still fairly high in carbs, sugar, and calories, which might not be ideal for those seeking a low-calorie or low-carb diet.

HEALTH & BENEFITS

Dutch Crunch rolls can be a good source of protein, selenium, and fiber, as well as whole grains depending on the flour used. Selenium is known for its antioxidant properties which can reduce inflammation and support a healthy immune system.
