Instructions

1.Rinse quinoa in a fine-mesh strainer under cold water, then add it to a medium saucepan along with 2 cups of water and salt. Bring to a boil, then reduce heat to the lowest setting, cover, and simmer for 15 minutes.
2.Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork.

4.Heat the oven to 350 F and line a baking sheet with parchment paper.
5.Scoop about 2 tablespoons of the quinoa mixture into your hands and shape into a ball.
