Dutch Croquetten are a popular snack in the Netherlands, enjoyed as a quick bite or appetizer. They are typically made with a creamy beef and potato filling, coated in breadcrumbs and deep-fried until golden brown and crispy. This recipe switches out beef for lean veal and adds a variety of seasonings for added flavor. The result is a delicious snack or appetizer that is perfect for feeding a crowd. These croquettes are best served hot and crispy, with a variety of dipping sauces on the side.

Instructions

.In a large pan over medium-high heat, cook the ground veal until browned and cooked through. Drain any excess fat.
.In a separate saucepan, melt the butter over medium heat. Add the flour and cook, stirring constantly, for 2 minutes.
.Slowly whisk in the milk and chicken broth until the mixture is smooth and thickened.
.Add the paprika, chili powder (if using), curry powder (if using), salt, pepper, Worcestershire sauce, and parsley to the pan with the veal and stir to combine.
.Pour the milk mixture over the veal mixture and stir until evenly combined. Cook for 5-7 minutes, stirring frequently, until the mixture thickens.
.Remove the mixture from the heat and stir in the Gouda cheese strips (if using). Transfer the mixture to a baking dish and refrigerate for 2-3 hours, until chilled and firm.
.Once the mixture is firm, use your hands to shape it into small cylinders or croquettes.
.In three separate bowls, place the flour, beaten egg, and dry breadcrumbs. Dip each croquette first in flour, then in egg, and finally in breadcrumbs, using your hands to press the breadcrumbs onto the surface of the croquette.
.Heat the oil in a large, deep skillet over medium-high heat. Place the croquettes in the hot oil and fry, turning frequently, until golden brown on all sides.
.Remove the croquettes from the oil with a slotted spoon and place on a paper towel-lined plate to drain any excess oil. Serve immediately, garnished with parsley or a squeeze of lemon juice if desired.
