1/4 cup golden raisin
1/4 cup dark raisin
1/4 cup pine nuts
1/4 cup sweet vermouth
chicken stock , as needed

Instructions

1.In a bowl, mix together ground cloves, orange zest, balsamic vinegar, mint leaves, 1/4 cup olive oil, salt and pepper.

5.Add the golden raisins, dark raisins, pine nuts, and sweet vermouth to the pan, and stir to combine. Reduce heat to low and let the mixture simmer for 10 minutes.
6.Preheat oven to 375°F
7.Heat remaining 2 teaspoons of olive oil in another skillet over medium-high heat
8.Add chicken breasts and cook for 5-8 minutes or until golden brown on both sides.
9.Transfer the chicken to a baking dish and pour the raisin mixture over it.
10.Bake the chicken in the oven for 10-15 minutes or until the chicken is fully cooked. Serve hot.
