3/4 ounce active dry yeast
2 cups flour
1 cup whole wheat flour

4 tablespoons olive oil ( plus more )
1 1/2 tablespoons herbes de provence

Instructions

1.In a large mixing bowl, combine sugar, yeast and 1/4 cup warm water.
2.Mix well and let sit for 5-10 minutes, allowing a foam to form on top.
3.In a separate bowl, whisk together flours and salt.
4.To the yeast mixture, add 2 tablespoons olive oil, remaining 1 1/2 cups warm water and herbes de provence.
5.Gradually stir in flour mixture, mixing until well-incorporated.
6.Transfer dough to a floured surface and knead for 5-7 minutes, adding flour as needed to prevent stickiness.
7.Cover dough with a clean towel and let rise in a warm place for about an hour or until doubled in size.
8.Preheat oven to 400°F (200°C) and grease a baking sheet with olive oil.
9.Transfer dough to the baking sheet, pushing it down to stretch it. Drizzle with olive oil and sprinkle with additional herbs de provence.
10.Bake for 20-25 minutes, or until golden brown.
11.Let cool for a few minutes before slicing and serving.
