Ingredients

1 1/4 cups spinach , washed
2 tablespoons chopped parsley
1 garlic clove , crushed
2/3 cup part-skim ricotta cheese , drained
2/3 cup soy flour
1 egg , plus
1 egg yolk
1 cup freshly grated parmesan cheese , plus extra grated parmesan , to serve
nutmeg ( generous grating )
salt and pepper
6 tablespoons unsalted butter
1 pinch salt
16 fresh sage leaves , coarsely chopped
Gnocchi is a traditional Italian dish made out of flour and potato dough. Instructions

1.Cook the spinach until wilted and tender then drain it well. Chop it into fine pieces and mix with parsley and garlic.
2.In a bowl, mix together the spinach mixture, ricotta, soy flour, egg, egg yolk, Parmesan cheese, nutmeg, salt, and pepper.
3.On a floured surface, roll out a portion of the dough with your hands into long cylinder shapes approximately 2.5 cm in diameter.
4.Cut each cylinder into small gnocchi shapes and gently press a fork onto each piece.
5.Bring a pot of salted water to a boil and cook gnocchi batches for around 2-3 minutes.
6.In a saucepan, melt butter and sage leaves on medium heat until the butter turns light brown.
7.Once the gnocchi is cooked, pour the sage butter over it and generously sprinkle it with grated Parmesan cheese.
