Ingredients

1/2 cup mayonnaise
2 -4 garlic cloves , smashed to a paste
salt
fresh ground black pepper
1 medium eggplant , sliced crosswise
canola oil
2 red bell peppers
1 loaf ciabatta , sliced lengthwise in 1/2 ( or you can use French bread )
1/2 lb fresh mozzarella cheese , thinly sliced
fresh basil leaf
baby arugula ( or spinach or lettuce )
This Grilled Eggplant and Fresh Mozzarella on Ciabatta sandwich is a great option for a satisfying and filling meatless meal. The grilled eggplant and red bell peppers add a smoky flavor and the fresh mozzarella cheese and garlic mayonnaise take this sandwich to the next level. Instructions

1.Heat grill to medium heat.
2.Make garlic mayonnaise by stirring together mayonnaise, garlic paste, salt and pepper.
3.Brush sliced eggplant with canola oil and grill each side for 4-5 minutes, or until grill marks show and eggplant is tender.
4.Grill red bell peppers until skin is charred, then remove and let cool.
5.Remove the skin and cut them into thin slices.
6.Toast the ciabatta slices on the grill until they are golden and then spread garlic mayonnaise on each slice.
7.Layer on grilled eggplant, fresh mozzarella, red bell pepper slices, fresh basil leaves and baby arugula.
8.Place the other half of the bread on top and serve.
