1 eggplant
1/4 cup sea salt
3 tablespoons parmesan cheese
4 ounces mozzarella cheese
4 ounces pine nuts
2 ounces fresh basil
16 ounces tomato sauce
2 eggs
32 ounces ricotta cheese
Eggplant Rolatini is an Italian-American dish that has become increasingly popular in recent years. Instructions

1.Preheat the oven to 375°F.
2.Slice the eggplant lengthwise about 1/4 inch thick. Generously sprinkle salt on both sides of the slices and leave aside for 30 minutes to release the bitterness and moisture. Then rinse them under cold water and use paper towels to pat dry them.
3.Spread 1/4 cup of tomato sauce in the bottom of a 9x13 inch baking dish.
4.In a mixing bowl, add ricotta cheese, egg, basil, fifty percent of the pine nuts, and parmesan cheese. Mix well and set it aside.
5.Set each slice of eggplant on a flat surface and top the sliced eggplant with a thin layer of the cheese mixture. Roll up the slice and place it in the baking dish seam-side down. Repeat with the remaining eggplant to create 8-10 rolls.
6.Pour the remaining tomato sauce over the rolls and sprinkle the remaining parmesan cheese and pine nuts on top.
7.Bake it in the oven for 30-35 minutes, or until the eggplant is cooked through.
