16 ounces part-skim ricotta cheese
1/4 cup grated parmesan cheese
2 cups shredded mozzarella cheese
1 large egg

Instructions

1.Preheat the oven to 375°F.
2.In a bowl, mix ricotta cheese, egg, and parmesan cheese together.
3.Take a 9x13 inch baking dish and spread 1/2 cup spaghetti sauce at the bottom.
4.Place one layer of lasagna noodles on top of the sauce.
5.Spread half of the ricotta mixture on top of the noodles.
6.Add half of the roasted red peppers, spinach, mushrooms, and mozzarella cheese on top of the ricotta mixture.
7.Repeat with another layer of noodles, ricotta mixture, vegetables, and mozzarella cheese.
8.Lay the final layer of lasagna noodles on top of the cheese.
9.Pour 1 1/2 cups of spaghetti sauce over the lasagna and spread it evenly.
10.Spread the remaining mozzarella cheese on top of the sauce.
11.Cover the dish with foil and bake for 35 minutes.
12.Remove the foil from the dish and continue baking for another 5-10 minutes until the cheese is golden brown and bubbly.
13.Remove the dish from the oven and let it sit for 10 minutes before serving.
