Ingredients

1 1/2 cups canned black beans , drained and rinsed
3/4 lb green beans , fresh
4 cups spinach leaves , rinsed
3 cups butternut squash , cubed
2 teaspoons oregano , dried
1 teaspoon salt
1 tablespoon pepper
1 cup basil pesto
1/2 lb pancetta , chopped and fried
1/2 lb pasta , small shells
1/2 cup parmesan cheese , grated

Minestrone is a classic Italian soup that has many variations. Genovese Minestrone is a version from the Liguria region of Italy that features basil pesto and no tomatoes. Instructions

1.Heat olive oil in a large pot and add garlic and onions. Cook until onions are translucent.

3.Pour in chicken broth and white wine. Add black beans, green beans, spinach, butternut squash, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
4.In the meantime, cook the pasta in a separate pot according to package instructions. Drain and set aside.
5.Once the soup is done, add in the basil pesto and fried pancetta. Mix well.
6.To serve, divide pasta among bowls and ladle soup over it. Top with grated parmesan cheese and a drizzle of olive oil.
