Ingredients

4 tablespoons olive oil
1 cup thinly sliced onion
1/4 teaspoon dried sage
1 lb calf liver , cut crosswise into 1/4 inch strips
kosher salt
fresh ground black pepper
2 tablespoons white wine vinegar
2 tablespoons italian flat leaf parsley , finely chopped

Instructions

1.In a large nonstick skillet, heat 2 tablespoons of the olive oil over medium heat.
2.Add the sliced onions and dried sage to the skillet and cook for 8 minutes,
3.stirring occasionally, until softened and golden brown.
4.Remove the onions from the skillet and set aside, still leaving the oil in the skillet.
5.In the same skillet, add the remaining 2 tablespoons of olive oil and heat over medium-high heat.
6.Season the strips of calf liver with kosher salt and freshly ground black pepper.
7.Add the liver to the skillet and cook for 2-3 minutes per side, or until browned and cooked through.
8.Once the liver is done, remove it from the skillet and add the white wine vinegar.
9.Cook the vinegar for 1-2 minutes, stirring constantly, until it reduces and thickens.
10.Add the cooked onions and parsley to the skillet with the reduced vinegar and stir well.
11.Serve the Venetian Calf's Liver with Onions immediately, accompanied with a side salad or mashed potatoes if desired.
