1/2 cup kosher salt
1/2 cup sugar
1 1/2 cups flour
2 eggs
1/4 cup milk
1 1/2 cups dried breadcrumbs

1 lb fresh mozzarella cheese , sliced
1/4 lb parmigiano-reggiano cheese , plus extra for garnish , grated ( or just Parmesan )
olive oil , for frying ( about 2 cups )
1 lb penne rigate , cooked al dente
1/4 cup minced Italian parsley , for garnish
2 tablespoons extra virgin olive oil
1 yellow onion , minced
4 garlic cloves , crushed
6 cups roma tomatoes , peeled and diced ( in a pinch , used canned )
1 tablespoon fresh basil leaf , thinly sliced
1/2 tablespoon fresh oregano leaves , chopped

fresh ground black pepper

Instructions

1.Brine the chicken by mixing kosher salt, sugar, and 1 quart of water in a large bowl until sugar and salt dissolve. Add chicken breasts and cover with plastic wrap, refrigerate for 2-3 hours.
2.Whisk the eggs and milk together in a shallow bowl.
3.In a separate bowl, combine flour, dried oregano, dried basil, dried parsley, fine sea salt, and fresh ground black pepper.
4.In a third bowl, mix dried breadcrumbs and panko breadcrumbs.
5.Remove chicken breasts from brine and pat them dry.
6.Coat chicken with seasoned flour, then dip in egg mixture, and coat in breadcrumb mixture.
7.Fry chicken in olive oil over high heat for 4-5 minutes until golden brown and cooked through. Remove chicken from the pan.
8.In the same pan, add extra virgin olive oil, minced onion, and crushed garlic. Fry for 1-2 minutes.
9.Add peeled and diced roma tomatoes, fresh basil, fresh oregano, salt, and fresh ground black pepper to the pan. Cook for 15-20 minutes until the sauce has thickened.
10.Preheat the oven to 375°F.
11.Spoon tomato sauce over the chicken breasts, top with sliced fresh mozzarella and grated parmigiano cheese.
12.Bake chicken breasts for 5-7 minutes until the cheese has melted and is lightly browned.
13.Garnish with minced Italian parsley and extra grated parmigiano cheese. Serve the chicken breasts with cooked al dente penne rigate pasta.
