6 round courgettes
150 g couscous
4 tablespoons extra virgin olive oil
3/4 cup white wine
3/4 cup tomato puree
1 little young onion , chopped
2 tablespoons fresh parsley , finely chopped

Instructions

1.Preheat the oven to 200°C (fan-forced).
2.Wash the zucchinis, and slice the tops.
3.Scoop out the insides, leaving the shells.
4.In a bowl, combine the couscous, olive oil, onion, parsley, chives, chopped zucchini, and white wine. Mix well.
5.Add the tomato puree, salt, and a pinch of fresh basil, and mix again.
6.Stuff the zucchinis with the couscous mixture, and replace the tops of the zucchinis.
7.Arrange the stuffed zucchinis in a baking dish and bake in the oven for 30-35 minutes, or until the shells are tender.
