Ingredients

16 squid , tubes skinned , with entrails removed
1 garlic clove
1 tablespoon olive oil
16 ounces diced tomatoes
100 ml red wine
2 tablespoons chopped parsley
100 ml olive oil
1 shallot
1 fennel bulb
2 garlic cloves
1/3 cup arborio rice
150 ml white wine
3 tablespoons chopped parsley
Squid stuffed with fennel risotto is a flavorful and sophisticated dish that combines the rich flavors of Italian risotto with tender, savory squid tubes. Instructions

1.Preheat your oven to 400°F.
2.Heat 1 tablespoon of olive oil in a pan over medium heat.
3.Add in the garlic clove and cook until fragrant.
4.Add in the diced tomatoes and red wine and bring to a simmer.
5.Let the sauce simmer for about 5 minutes until it thickens.
6.Add in the chopped parsley and stir.
7.In a separate pan, heat 100 ml of olive oil over medium heat.

9.Add in the chopped fennel bulb, garlic cloves, and arborio rice.
10.Stir the rice mixture until it becomes translucent.
11.Pour in the white wine and cook until the wine has been absorbed.
12.Begin adding in cups of chicken or vegetable stock until the rice has absorbed all of it. This should take about 15-20 minutes.
13.Once the risotto is cooked, remove it from the heat and add in the chopped parsley.
14.Prepare the squid by stuffing each tube with the risotto mixture.
15.Place the stuffed squid tubes in a baking dish and spoon the tomato sauce over the top.
16.Bake the dish for 20-25 minutes, until the squid is cooked through.
