Pizzoccheri is a traditional dish from the historic region of Valtellina in northern Italy. It's usually made with buckwheat pasta, cheese, potatoes, cabbage, and garlic; all the ingredients that reflect its alpine origins. This recipe offers a healthier spin on the original version, by replacing buckwheat pasta with gluten-free pizzoccheri pasta and reducing the amount of cheese, making it more plant-based. The result is a nutritious dish that will warm your soul and nourish your body. The dish is often served with a full-bodied red wine such as Merlot or Pinot Noir.

Instructions

.Peel the potatoes and cut them into small cubes of about ½ inch in size.
.Peel the garlic and smash it lightly.
.Put a large pot of salted water on the stove to boil.

.Drain everything through a colander, keeping a cup of the cooking water aside.
.Cut the cheese into small cubes.
.In a large pan, melt the butter over low heat.
.Add the cabbage-potato-pasta mixture to the pan, stir for a few moments.
.Add the cheese, a pinch of pepper, and the cup of cooking water.
