1 lb shredded mozzarella cheese , divided
1 lb sliced deli roast beef ( dimensions of about 5 '' x9-inch )
1 jar low-carb spaghetti sauce ( Paul Newman 's brand is great ! )
Low Carb Italian Beef Roll Ups are a rich and satisfying meal that's perfect for dinner. Made with sliced deli roast beef, ricotta and mozzarella cheese, and low-carb spaghetti sauce, this meal is sure to be a hit with the whole family. Instructions

1.Preheat oven to 375°F.
2.In a medium bowl, mix together the ricotta cheese, egg, garlic powder, onion powder, and italian seasoning. Add in 1 cup of the shredded mozzarella cheese and stir well.
3.Lay the sliced roast beef flat, and spread the ricotta cheese mixture over it. Sprinkle the remaining shredded mozzarella cheese over the top.
4.Starting at one end, carefully roll up the beef into a tight cylinder and place it in a greased baking dish.
5.Cover the roll-up with low-carb spaghetti sauce and bake in the preheated oven for about 25-30 minutes.
