1 bunch baby beets
1 liter good quality chicken stock or 1 liter beef stock
3 tablespoons olive oil
2 -3 shallots or 1 medium onion , finely chopped
500 g arborio rice
1/2 cup dry white wine
freshly grated parmesan cheese
50 g unsalted butter
salt and pepper
chives , to serve

Instructions

1.Peel the baby beets and cut them into bite-sized pieces. Boil them in a pot of salted water until tender, then drain and keep warm.
2.Heat the chicken stock or beef stock in a pot and keep it simmering.
3.In a separate pot, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped shallots or onion and sauté until softened.
4.Add the arborio rice to the pot and stir to coat it with the oil and shallots/onion. Cook for 1-2 minutes, or until the rice is lightly toasted.
5.Add the dry white wine to the pot and stir until it is absorbed by the rice.
6.Add a ladleful of the simmering stock to the pot and stir until it is absorbed by the rice. Continue adding stock and stirring until the rice is cooked al dente.
7.Once the rice is cooked, stir in the remaining tablespoon of olive oil, Parmesan cheese, unsalted butter, and the cooked baby beets.
8.Season the risotto with salt and pepper to taste and serve it sprinkled with fresh chives.
