Ingredients

1 cake compressed fresh yeast
2 cups milk
1/2 cup raisins , finely chopped
1/2 cup warm water
4 egg yolks
1 egg
1/2 cup white sugar
1/4 cup butter , melted
1/2 teaspoon vanilla extract
1/2 cup orange zest
1 teaspoon salt
6 cups all-purpose flour
2 quarts vegetable oil for frying
Ponczki are traditional Polish doughnuts that are eaten on Fat Thursday, the last Thursday before Lent. They are similar to American doughnuts but with a few differences. Instructions

1.In a small bowl, crumble the yeast and dissolve in 1/4 cup of warm water.
2.In a mixing bowl, whisk together the milk, egg yolks, egg, sugar, butter, vanilla, orange zest, and salt.
3.Stir in the yeast mixture and mix until well combined.
4.Gradually add the flour, stirring until a soft dough forms. Add in raisins and mix until well distributed.
5.Turn the dough onto a lightly floured surface and knead for 10 minutes.
6.Cover and let rise in a warm place for 1 1/2 hours or until doubled in size.
7.On a floured surface, roll out the dough to 1/2 inch thickness and cut out rounds with a 3 inch biscuit cutter.
8.Cover and let rise again for 20-30 minutes.
9.Heat the oil in a deep fryer or heavy skillet to 375°F.
10.Carefully drop the doughnuts into the oil and fry until golden brown on both sides.
11.Remove with a slotted spoon and place on paper towels to drain.
12.Roll the warm doughnuts in sugar.
