Ingredients

2 -3 tablespoons olive oil
3 tablespoons pancetta , chopped ( or ham )
1 large onion , chopped
2 stalks celery , chopped
2 carrots , diced
5 garlic cloves , finely chopped
1 bag lentils
1/2 teaspoon thyme
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
14 ounces diced tomatoes
1 -2 teaspoon salt & freshly ground black pepper
0.5 box ditalini shaped pasta
1 -2 teaspoon parmesean cheese , grated
1 loaf crusty bread

Instructions

1.In a large pot, heat the olive oil over medium heat.
2.Add the pancetta (or ham), onion and garlic to the pot. Cook until the onion is translucent and the pancetta is browned.
3.Add in the celery and carrots. Cook for another 5 minutes or until the vegetables are soft.
4.Pour in the lentils and add enough water or broth to cover everything by at least 2 inches.
5.Add in the thyme, basil, oregano, diced tomatoes, salt and pepper. Bring everything to a boil and then reduce the heat to low. Let simmer for 30-45 minutes or until the lentils are tender.
6.While the soup is simmering, cook the ditalini pasta according to the package instructions.
7.When the soup is done, stir in the cooked pasta. Serve hot with a sprinkle of grated parmesan cheese and a slice of crusty bread.
